Vichyssoise
Classic French soup used by European women as a way to cleanse the system and popularized in the novel "French Women Don't Get Fat". Be advised: it's not just the soup that makes the French women skinny and hot; it's also that they don't have elevators and they still smoke cigarettes and drink plenty of wine it seems...  

2 leeks, sliced, white only
2 - 4 tablespoons unsalted butter
1 small onion, diced
2 -4 cups water
1 tablespoon salt           
Dash pepper            
1 carrot, chopped                    
1 large white potato, cubed            
2 cups chicken stock             
1/4 cup 32% cream           
2 tablespoons cornstarch
1/4 cup chopped parsley


In a soup pot add butter and onion, leeks. Brown and add carrots and potato and 2-4 cups water (enough to cover mixture). Let simmer for 20 minutes or until everything is soft, remove from pot and puree in blender. Clean pot and add puree and 2 cups chicken stock and salt/pepper if required. Bring to a boil, add cream and mix well, bring to a boil and add cornstarch and water mixture. Boil for 1 minute and remove from heat, add chopped parsley and mix well for 1 minute. Let stand for 5 minutes and serve.
