Classic Cracked Hard Peppermint Candy
Use a light corn syrup for clear, hard candy.
1 cup sugar
1/2 cup corn syrup
4 tablespoons water
1 tablespoon of concentrated pepermint flavor
OPTIONAL
1/4 cup confectioners sugar
Heat sugar, corn syrup, water to 310F/55C, mixing regularly. Add flavor, mix quickly, add coloring, mix and pour onto greased wax paper or dollop on paper with a turkey baster (for more rounded candies). Let cool and crack; remove wax paper and toss in confectioners sugar. Store in glass jars, chilled.
