Creamy Butterscotch Candy
The more cream you add the more pliable it becomes.
1 cup sugar
1/2 cup corn syrup
4 tablespoons water
1 tablespoon of concentrated butterscotch flavor
2 tablespoons 32% cream
Heat sugar, corn syrup, water to 310F/55C, mixing regularly. Add flavour, mix quickly, add coloring, mix, add cream, mix and pour onto greased wax paper or dollop on paper with a turkey baster (for more rounded candies). Let cool and crack; remove wax paper store in glass jars, chilled.
