Making your own chicken stock (broth)
Back in the Day Grandma did not only eat white meat and never used Oxo cubes or a tetra pac to make her soup base. No, she would have boiled the chicken bones and made her own broth. It's easy; here's how:  

Chicken bones with some meat attatched (uncooked)
2 litres of water
1 tablespoon salt
1/2 teaspoon pepper
1 onion, diced           
1 carrot, diced            
                   
            
             
           




Take a whole chicken and remove as much meat as possible, perhaps with scissors. Place all ingredients in a large pot (with lots of water covering the meat and vegetables) and boil for about 40 minutes. Let cool and remove the hardened (congealed) fat from the top. Pass juice through a fine strainer; and season. Can be used immediately or chilled and used later.
