Quick Microwave or stovetop cheese sauce
Why buy packaged sauces? Make your own cheese sauce. Serve with a salad for a balanced meal.
1 cup milk
Add 1/2 cup cheese; marble or cheddar in cubes or grated
dash pepper
1/4 cup unsalted butter
IN A SEPERATE BOWL MIX:
1 tablespoon cornstarch
1/2 cup water
In a separate bowl mix 1 tablespoon cornstarch and 1/2 cup water, until dissolved. Add 1/4 cup butter and milk to saucepot or microwave dish. Heat until warm, not boiling (1 min on high, mix every minute in microwave or heat on low heat on stovetop mixing frequently.) Add 1/2 cup cheese; marble or cheddar in cubes or grated. Heat and mix until the cheese is melted and the mixture is smooth. Add cornstarch mixture and mix completely. Heat for 1 minute on high power, or boil on stovetop for 1 minute. Remove from heat and microwave and mix constantly for 1 minute. Pour over pasta and serve immediately or mix with pasta and place in an oven-ready pan to be heated immediately or frozen. Optional ingredients include: Chunks of ham or vegetables; add a topping of breadcrumbs and parsley and parmesan cheese; or simply cover in mozzarella cheese. Heat in oven at 325 for 30-35 min at 350 or warm in oven to brown cheese or breadcrumb topping.
This is a handy recipe to use up your small scraps of cheese accumulated over the week or for trays of hearty Macaroni and Cheese casseroles. Kids love macaroni and cheese and this sauce includes real cheese; making it a good source of protein in addition to the carbohydrates from the pasta. This sauce can be prepared in the microwave or on the stovetop; if you are making it on the stovetop simply replace heating for 1 minute and repeat to mix in sauce pot stirring constantly. The main idea is to get everything liquid, warm to boil, then add cornstarch mixed in water, boil for another minute and cool, stirring constantly.
