Candied Carrots
  

6-8 large carrots sliced in 4 inch sections
1/2 cup butter
1 cup water
Juice of 1 lemon
OR           
or 1/2 cup water, 2 teaspoons lemon concentrate, 1 tablespoon sugar            
2 tablespoons brown sugar                   
1/2 teaspoon vanilla (optonal)            
             
           




In a large pot boil some water with a dash of salt until bubbling. Add carrots and cook for 5 minutes. Run under cold water and place in a baking or roasting pan. Add Water, lemon juice butter and sugar and cook uncovered at 350 for about 40 minutes or until sauce starts to bubble.
