Baked Corn Bread
  

1 egg
2 tablespoons melted butter or shortening
1 cup white all-purpose flour
2 tablespoons baking powder
1 cup fine cornmeal           
1/2 cup high quality fresh, canned or frozen niblets (optonal)            
1/2 cup chopped green onions or very finely diced white onion (optional)                   
            
             
           




Mix egg and liquid shortening. Add flour, baking powder, cornmeal and onions, mix well.Fold in niblets and pour into a shallow baking pan. Cook at 425 for about 20 minutes. Serve with lots of butter or for something sweet, maple syrup.
