Creamy Carrot Coleslaw 
A great salad to prepare in advance and when you need some, just roll in some mayonaise; tasty and nutritious.  

2 large carrots
2 tablespoons oil
1 tablespoon vinegar
1/2 teaspoon salt
1 teaspoon sugar           
1/4 cup mayonaise            
                   
            
             
           




Peel and grate carrots. Add oil, vinegar, sugar, salt and mix well. Place in refrigerator, well covered until ready to serve.When ready to serve add mayonnaise and mix well.Per serving: 1 tablespoon mayonnaise 2 tablespoons raisins (optional)

  

Prepare in advance and add a tablespoon of mayonnaise and some raisins before serving.
