Chicken Cacciatore
Nice served over pasta  

2 kg bone-in chicken
1/2 cup flour
1 teaspoon salt
dash pepper
6 tablespoons olive oil           
2 tablespoons minced garlic            
1 Tablespoon diced onion              Optional:     
Dash Oregano            
4 cups tomato juice             
1 can crushed or seasoned tomatoes            1/2 cup red wine
1/2 cup diced green, yellow or red peppers
1/2 cup diced onion
1 cup diced celery
1 teaspoon minced garlic
In a plastic bag add flour/pepper/salt and shake chicken to coat. In a hot fry pan add oil, onion oregano and garlic; when chicken is browned on both sides; about 3 minutes each. Add wine and remove from heat, covering the pan.  In a separate bowl add all other ingredients and mix well.Separate and bag or heat slowly in the oven at 350 for about 60 minutes or until sauce is bubbling.

  

Makes quite alot. If for just one meal 1/2 ingredients.
